Serves 4

Probably one of the easiest ways I’ve found to make carrots and they are elegant enough for a dinner to impress or quick enough for a weeknight dinner.
- 6-8 medium to large carrots
- 4 cloves garlic, peeled and smashed
- 2 Tbs. olive oil
- 4 sprigs of fresh thyme
- 2 tsp. salt
- 1 tsp. black pepper
- Preheat oven to 425 degrees fahrenheit.
- preheat an oven safe pan on the stove on medium high heat. Add olive oil and carrots, sprinkle with salt and pepper then toss in the oil.
- Add garlic and thyme, saute carrots until golden on one side.
- Place in preheated oven for 10-15 minutes or until carrots are tender.
