Roasted Carrots

Serves 4

Probably one of the easiest ways I’ve found to make carrots and they are elegant enough for a dinner to impress or quick enough for a weeknight dinner.

  • 6-8 medium to large carrots
  • 4 cloves garlic, peeled and smashed
  • 2 Tbs. olive oil
  • 4 sprigs of fresh thyme
  • 2 tsp. salt
  • 1 tsp. black pepper
  1. Preheat oven to 425 degrees fahrenheit.
  2. preheat an oven safe pan on the stove on medium high heat. Add olive oil and carrots, sprinkle with salt and pepper then toss in the oil.
  3. Add garlic and thyme, saute carrots until golden on one side.
  4. Place in preheated oven for 10-15 minutes or until carrots are tender.
